There really is nothing to making green papaya salad that is sweet, spicy, and so satisfying. I have tried a lot of recipes for green papaya salad in my days and many of them require oils, appliances, or a long list of ingredients. When it comes to Thai food, you simply can’t beat a tasty and indulgent pad Thai recipe. In fact My husband absolutely LOVES Asian food and one of his favorites (aside from chow mein) is pad Thai as is mine. We don’t go out to eat very often at all since discovering vegan and raw foods for the most part so I decided to come up with my own raw vegan pad Thai recipe right here at home.

Just because I’m into healthy eating doesn’t mean that I want to forfeit indulgent foods that are oh so sweet. Thanks to the plant kingdom, I don’t have to… ever! One of my favorite ways to indulge is in the form of truffles. Oh yeah, truffles are where it’s at.

Not only is this dish delicious but it packs a powerful nutrient punch too! I absolutely love the subtle taste of celery root together with the delicate flavors of carrots, zucchini and yellow squash which is what makes up the “noodles” of this dish.
